We’re Pairing Beer with Chocolate & Meat—It’s Incredible.

What's New at Ava's

April 2, 2025

Hi Reader,

What do bold craft beers, perfectly cooked meats, and ridiculously easy chocolate mousse have in common? They’re all in this week’s newsletter—and they all belong in your life ASAP. Whether you’re a hazy IPA fan, a dark lager devotee, a teetotaler, or just here for the beer-infused dessert (we see you), we’ve got something new and exciting to try.

🥩 Ava’s Meat Selection: A Cut Above the Rest 🍖

At Ava’s Market, we don’t do bland, mass-produced meats that taste like they were raised in a factory. We do meat the right way—local, organic, free-range, and truly grass-fed. That means no antibiotics, no artificial fillers, and no animals force-fed grain just to fatten them up fast. Instead, our meats come from animals raised naturally on pasture, which translates into richer, juicier, and more flavorful cuts that put supermarket brands to shame.

Why Grass-Fed & Organic Matters

  • More Nutrition, Less Junk – Higher omega-3s, more antioxidants, and none of the weird additives or antibiotics hiding in factory-farmed meat.
  • Flavor You Can’t Fake – A lifetime on pasture creates marbling, depth, and texture that grain-fed meat just doesn’t have. When meat actually tastes like something, you don’t have to drown it in sauces.
  • Better for the Planet – Grass-fed animals help restore soil health, reduce emissions, and eliminate the need for synthetic fertilizers. Basically, eating better meat = being a better human.

A Few Must-Try Meats at Ava’s

  • Certified Organic Smart Chicken
The juicy, clean, slightly sweet taste of actual chicken (not the watered-down stuff from the big stores). Raised on organic feed with plenty of room to roam, this is what chicken should taste like.
  • TenderBison Sirloin Steak
Unlike grain-fed bison, which loses its signature flavor, this 100% grass-fed cut is lean, slightly sweet, and bursting with bold, steakhouse-worthy depth. Less fat, more taste, all goodness.
  • Beeler’s Porterhouse Pork Chops & Loin Roast
If you’ve only ever had supermarket pork, you’re in for a juicy, buttery, deeply marbled revelation. No dry, pale, flavorless pork here—just rich, tender bites that practically melt in your mouth.
  • Superior Farms American Lamb Stew Meat
Pasture-raised for a delicate, clean flavor,
this lamb is earthy, rich, and nothing like the overly gamy lamb some people fear. Perfect for stews, braises, or slow-cooked magic.
  • Mishima Reserve American Wagyu Beef Patties
    The ultimate burger experience.
Buttery, insanely juicy, and so richly marbled that you could eat it plain (but why not add a little cheese and really go for it?).
  • Thousand Hills 100% Grass-Fed Beef
    Bold, beefy, and ridiculously flavorful
—this is what steak should alwaystaste like. No factory-farmed weirdness, just real, deeply satisfying beef.

When you taste real meat, the difference is undeniable. No factory-farmed flavor, no bland bites—just the best, cleanest, richest meats you’ll ever cook. Come pick up your next meal at Ava’s, where better meat makes everything taste better. 🥩🔥

Recipe: 🍫 Easy No-Bake Chocolate Stout Mousse 🍫

Beer and chocolate are a match made in dessert heaven, and this silky, boozy mousse is here to prove it. With rich dark chocolate and a splash of stout beer, this treat is ridiculously easy and dangerously good. Plus, no baking—just melt, whip, and chill!

Did you know: The term “mousse” originates from the French word for “foam,” reflecting the dessert’s light and airy texture, dating back to 1755. Initially, “mousse” referred to dishes with a foamy texture, and it wasn’t until the late 19th century that chocolate mousse gained popularity as a dessert, thanks to French artist Henri de Toulouse-Lautrec, who whimsically dubbed it “mayonnaise de chocolat.” Julia Child popularized it in America.

Guittard's Santé Baking Chips are sweetened with coconut sugar, uniquely imparting a deep, roasted cocoa flavor with lingering notes of dried fruit, nuttiness, subtle coconut, and vanilla. Coconut sugar also aligns with keto and paleo diets, delivering a rich taste without sugar alcohols or refined sugars.

Ingredients:

  • 1 cup Guittard Santé dark chocolate baking chips
  • ½ cup heavy cream
  • ¼ cup Chocolate Pecan Pie Stout (or any bold stout/porter)
  • 1 Tbsp cane sugar

Instructions:

  1. Melt the chocolate & beer: Gently heat chocolate chips and stout in a saucepan over low heat, stirring until smooth. Let cool slightly.
  2. Whip the cream: In a separate bowl, beat heavy cream and cane sugar until soft peaks form.
  3. Fold it together: Gently fold the cooled chocolate-beer mixture into the whipped cream until just combined.
  4. Chill & serve: Divide into serving glasses and chill for 15 minutes. Serve as is, or top with whipped cream, shaved chocolate, or even a sprinkle of flaky sea salt.

Why You Need to Make This Right Now

  • Only four ingredients. That’s fewer than a bad margarita.
  • No baking required. Even your "I don't cook" friend could make it.
  • Beer makes everything better. This is just facts.
  • Pairs perfectly with a pint… or a grilled steak.

Whip up a batch, grab a beer, and enjoy the best of both worlds! 🍺🍫🔥
